240g self raising flour
240g sugar (castor is preferred but or granulated is doable)
2 eggs
240g softened butter
2tsp vanilla extract 
Whipping cream not paddled but whipped
Strawberry Jam

Turn the oven on to a toasty 180

Get creamy by mixing the butter and sugar together.

Whisk the flour into the butter and sugar slowly. Tease it even.

Beat the two eggs like the naughty sub that they are before adding to the mixture. 
Then get vanilla with it by adding the extract

Now line your cupcake tin with cupcake cases.

Slide into the oven for 15-18 minutes. 
Now start whipping the cream like it paid you too.

Set your cakes aside to cool.

Open the sponge halfway through the side and pump in your cream then generously finger in some jam.
